Thermomix Chocolate Brownies.


I have already adapted the Big Book of Baking Recipe for Chocolate Brownies to the Thermomix but I decided today to try the rather indulgent looking Chocolate Brownies from the Basic Cook Book that comes with the Machine. I have to confess that I was prompted by having an excess of Eggs as the Recipe uses 6.
First you chop the Chocolate and then melt it with the Butter.


What a glorious chocolate liquid results. I resisted the temptation to dip my finger in for a taste.
You then add the Sugar, Flour and a pinch of Salt.


The mixture fills a 30cm x 20cm Rectangular Tin.
I added Chunks of Chocolate to the top before baking and this was the result.


Thermomix Lemon Curd


The first time that I made Lemon Curd in the Thermomix I used the left over peel from the Lemonade. I found the taste rather bitter so I decided to make some using the recipe from the Basic Cookery Book Chip that comes with the Machine.
First you grind Lemon Zest with Granulated Sugar.


Then you add the Eggs, Butter and Lemon Juice.


The Thermomix does all of the cooking for you so you find something else to do while it is cooking and stirring for 20 minutes.
When the familiar jingle sounds then you whizz it up for a few seconds before pouring it into sterilised jars.
It is YUMMY. Even my 21 year old daughter loved it and she is not the greatest fan of the Thermomix but she just might be changing her mind!


Thermomix Chicken Korma


This recipe is from the Thermomix Fast and Easy Indian Cookery Book. After grinding the almonds for 8 seconds / speed 9  I dropped the Garlic, Ginger and Onion on to the running blades at speed 5.
I then added the Spices and cooked the mixture for 6 minutes/ 100c/ speed 2.
  

This is what the Korma Paste looked like before I added the spices and then Cream, Water and Tomato Puree. This is then cooked for 6 minutes/ 100c/ speed 2.



I decided to add the Korma Sauce to the Cubed Chicken which I had already browned in a Frying Pan. I like steaming the Rice in the Simmering Basket while finishing off the Curry on the hob.
Below is the finished result. I added Fresh Coriander for extra flavour.
It went down well with the family who are quite picky about Curries!

Thermomix Lemonade


Thermomix Lemonade is one of the easiest ways to start a Demonstration. Yesterday I had a go at making the Lemon Slush from the Basic Cook Book but the Lemonade wins hands down for flavour.
Place 2 Lemons cut in half into the Mixing Bowl with 500g Water and 100g Sugar. Crush for 2 seconds/speed 1.



Add remaining 500g Water, insert the Simmering Basket, hold it in place with the Spatula and strain the Lemonade into a Jug, add Ice Cubes and serve immediately.




The left over Lemon Peel can be used to make Lemon Marmalade if you add sugar and boil it for the appropriate length of time.

Thermomix Apple Cake


Tomorrow I am doing my first two Welcome Visits for people who have bought a Thermomix from me. Each person gets a choice of what to cook so my first Customer has chosen the Apple Cake Recipe from the Basic Cook Book and Chip that both come with the Machine.
It is an incredibly easy recipe.


Just weigh the ingredients in the Mixing Bowl and mix for 20 seconds at speed 6.
Pour the Batter in to the Cake Tin. Add Apple quarters that you have cut into slices. I put them between chop sticks so that you do not cut right through them.


Sprinkle the top with some Cinnamon and Brown Sugar to give a bit of extra flavour.
Below is the cake when it came out of the oven.


I recommend eating it with some Double Cream poured over the top in substantial quantities!




Hummus


It is so quick to make your own Hummus in the Thermomix. Chop a Garlic clove for 5 seconds/ speed 6.


Scrape down the bowl and add the other ingredients mix for 20 seconds/ speed 4. Scrape, repeat and check the consistency.


I added a small amount of the liquid to make the Hummus smoother.


Below is a small taster of what it turned out like. Next time I will add some Cumin.


Meringue without Eggs

 
Did you know that you can make Meringues from the liquid left over when you drain a Can of Chick Peas? I discovered this from Betty Baxter who trained me to become a Thermomix Advisor.
Whip up the liquid and some Lemon Juice with the Butterfly Whisk for 5 minutes/ 37c/ speed 3.5.
 Reset the timer for the same time and add White Vinegar and Vanilla Essence then sifted Icing Sugar one spoonful at a time. Switch the Machine off when all of the Sugar has been added.


This is what it turns in to. You can either make it a Pavlova or individual Meringues.


It takes about 1 hour 30 minutes to cook. Turn off the Oven and leave the door closed while it cools.
Below is the result. Store in an air tight container if they last that long!

Salmon and Pesto Topping


I wanted to make some Pesto but I barely had 5 g of Basil Leaves so I reduced the Recipe considerably with 5 g of Pine Nuts and one Clove of  Garlic. The key was to Turbo it for a few seconds.

I put the Salmon Fillets on some greaseproof paper in the Varoma Tray with the Pesto on top, Salt and Pepper and a squirt of Lemon Juice.


Here is the Varoma on top of the Mixing Bowl for Multi Layered Cooking.
I put New Potatoes in the Simmering Basket in the Mixing Bowl over 1 litre of Water.
I added Green Beans to the lower tray for the last 10 minutes of cooking.
Once they were all cooked I put them aside the keep warm and made the Hollandaise Sauce.



Thermomix Beef Enchiladas


I googled Thermomix Beef Enchiladas and came across this Recipe HERE
I grated 150g of Cheddar Cheese 5 seconds/ speed 8 and set it aside.
I ground some Chilli Flakes to make Chilli Powder Speed 9 for 2 minutes,
I then placed 2 Garlic Cloves, 1 Onion and 1 Red Pepper into the Mixing Bowl and chopped them for 5 seconds/ speed 8.


It should have been speed 5 - oops - so they came out like this.


Saute 10 minutes/ 100c/ speed 2 Measuring Cup off
Scrape down the side of the bowl. Add spices cook 3 minutes/ 90c/ speed 1.5 MC off.
Add Salt, Sugar and Passata cook 9 minutes/100c/ speed  3 to mix them in then speed 1, MC off.
I browned the Mince in a saucepan while I was cooking the Sauce in the Thermomix and then added it for the last 4 minutes of cooking and turned the speed up to 2.5 to mix it in.
I love the way that you can so easily tweak recipes to suit your needs in the Thermomix. I like to drain fat off Mince hence I cooked it separately first.


I made the mistake of not putting 1/4 of the sauce aside before I added the Mince.
I divided the Mince Mixture between the Tortillas and rolled them up and then poured some sauce over the top before sprinkling with Grated Cheddar Cheese.
The family realy liked this recipe so I will be cooking it again,

Vegetable Stock Paste


Yesterday I chopped the Vegetables for the Vegetable Stock Paste and left them in the fridge in a covered container. Today I made Vegetable Stock Paste with them.
This was one thing that attracted me to the Thermomix that I could make my own Vegetable, Chicken or Meat Stock Paste avoiding all the inevitable preservatives and additives in the shop bought ones.
The Vegetables included Carrots, Celery, Onions,Clove of Garlic and 2 Mushrooms.
First you pulverise these for 10 seconds/ speed 7 with the aid of the Spatula.
Next you add the White Wine, Salt and Olive Oil then you cook it 35 minutes/ Varoma, speed 2 with the Simmering Basket on top to protect from any splashing.
Remove the Simmering Basket and blend 20 seconds/ speed 10.
Pour it into Jars and keep in the fridge for a few weeks - preserved by the 150g salt!
Use one teaspoon instead of one Stock Cube in a recipe.


I added 1 litre of Water to the Mixing Bowl and then steamed some Rice for our Dinner.
It added a good flavour to it.

Salted Caramel Sauce


One thing that I love about the Thermomix is that you can use up excess ingredients easily.
I saw 4 Bananas in the fruit bowl and decided to make Salted Caramel Sauce to go with them.
I placed the Butter and Brown Sugar in the Thermomix /bowl and cooked them for 8 minutes/ 100c/ speed 2. I added 100g Double Cream and 1/2 teaspoon Salt /Flakes and cooked the sauce for another 8 minutes/ 100c/ speed 4.
It was then ready to serve with the Bananas and Vanilla Ice Cream.


Cottage Pie


There is a Recipe for Shepherds Pie in the British Isles Cook Book. I made it using Beef Mince instead of Lamb which makes it a Cottage Pie. I changed the order of things. First I weighed the Vegetables and chopped them for 5 seconds/ speed 5.


While I was sauteeing them in the Thermomix I browned the mince in a pan and added the sauce ingredients. I then added the sauteed vegetables.


While the meat was simmering I made the Mashed Potato. I had already boiled the Potatoes adding the chopped Leeks in the last 5 minutes. The cooked Potatoes and Leeks were put in the Thermomix Bowl with some butter, Milk and Seasoning. I put the Butterfly Whisk over the blade and within a few seconds I had delicious, fluffy Mashed Potato.


I put the Mince in a dish and covered it with the Mashed Leeks and Potatoes.


It was finished off with some grated Cheddar Cheese.

The Meal was completed in an hour including cooking time.
