Steamed Eggs Sunny Side Up

They have a healthy method in the new "Great Taste at Every Level" book for steaming eggs. You first boil water in the mixing bowl for 5 minutes / 100c/ speed 1. Then you crack the eggs on to the Varoma Tray and cook them for 6 minutes / Varoma / speed 1.

They were delicious. What I would call a healthy fried egg although it was steamed!

Accompanied by the less healthy fried potatoes, bacon and buttered toast!

Hamburgers and Salad

Home made Coleslaw chopped in 5 seconds! That is not a misprint. Weigh in the raw vegetables and dressing ingredients, set the machine for 5 seconds speed 5 and that is all there is to it.

Mixing the ingredients for the Burgers only took seconds too and with the help of the Lakeland Plastics Burger Press they were ready to cook moments later.

I cooked them for about 4 minutes each side.

Here is the finished result.

Spiced Moroccan Lentil Soup

I decided it was time to try out a new soup recipe so I chose the Spiced Moroccan Soup from the Basic Cook Book. I mixed the spices and then chopped the onions and garlic and sauteed them for 5 minutes. I then added the tomatoes, lentils and stock and cooked the soup for 20 minutes.

The soup was deliciously spicy and had some chunkiness to it which I liked.
I will definitely be making this one again.

Strawberry Icecream

The Basic Cook Book has a Fruit Ice cream Recipe which I decided to make with frozen Strawberries.
first you grind the Granulated Sugar and then you add the frozen Strawberries and crush them.

Next you add the Cream and mix it all in a few seconds helped by the spatula.

The result was delicious and most of it was eaten by the family that evening.

Dani Valent's Plum Syrup Cake

Last week I tried Dani Valent's recipe for plum syrup pudding. I followed her You Tube Video HERE
I was very pleased with the results.

First I made the plum sauce. I chopped the plums with sugar and then cooked them for 5 minutes in the thermie. I then blitzed it at high speed to make the sauce which is then set aside.

Next I made the cake.
I weighed in the nuts and ground them in a few seconds.

I then added the eggs, butter etc and mixed them at speed 5.

It made a lovely smooth batter.

I placed a quarter of a cup of plum syrup on the top and swirled it in before adding the sliced plums.

Pulled Pork and Barbecue Sauce

I decided to use a Barbecue Sauce Recipe from the Cookidoo Sauce collection to accompany Pulled Pork tonight.
First I chopped the onions with butter and then cooked them for 5 minutes.
I then added the other ingredients and the sauce was cooked in 10 minutes and it was delicious with enough left over for another meal.

Here are the other ingredients weighed out while the onions were cooking in the butter.
This was then added to the mixing bowl.

The barbecue sauce with the meal. I cooked the Sweet Potatoes, Carrots and Green Beans in the Varoma and then mashed the sweet Potatoes with Butter and seasoning in the Mixing Bowl.

Chocolate Guiness Cake

I have been wanting to make a Chocolate Guiness Cake for a while. After I melted the Guiness and Butter I added the Cocoa,Sugar, Sour Cream, Eggs and Vanilla and mixed them in. I then added the Flour and Bicarb of Soda.

I then poured the Cake Batter in to the 24cm round cake tin and baked it for 1 hour 10 minutes.

It had a delicious Chocolate Ganache topping made with Plain Chocolate and Double Cream.

This is what a slice looked like!

Thermomix Chocolate Mini Egg Fudge

Last Saturday I had a table at a local craft fair. I made some Chocolate Mini Egg
Fudge. I used the same recipe as the one for Jelly Bean Fudge but I used plain chocolate instead of white. It only took 28 minutes to cook in the Thermomix and set to a good fudge consistency.
I also made some Vanilla Jelly Bean and some Mars Bar and Malteser Fudge. I sold 17 out of 28 bags!

Thermomix Baking Blogger Wrap it up Webinar

Last Saturday I signed up for a Wrap it Up Webinar with Thermomix Baking Blogger. We were sent an ingredients list beforehand and the recipes. We made Tacos  and then Mexican Mince for the Burritos.

The Tortillas were suspended over an oven rack and then cooked in the oven for 25 minutes to become Tacos.
Next we cooked Coconut Wraps which we had mixed in the Thermomix earlier. Sorry to say that I don't have a photo of those but they were delicious.

We finished up with Guacamole and Mango Salsa (above) My Avocado was unripe so the Guacamole did not work out well.

Above is the Mexican Mince which had black Beans in it.
It was a great Webinar. We cooked so much in one hour and a half. Sophia gave us lots of helpful tips too.

Chopping Fresh Herbs in the Thermomix

The Thermomix will chop fresh herbs in 7 seconds and not turn them into a sludgy mess.
I had a family pack of fresh Coriander from Morrisons that needed to be used up so I decided to chop it up fine and freeze it.

Thermomix Sweet and Sour Chicken from Cookidoo

Having a Thermomix encourages you to try out new recipes so tonight I decided to cook Sweet and Sour Chicken from a Recipe Collection called One Pot Chicken on Cookidoo.
I weighed in 2 garlic cloves, Onions, Carrots and Peppers, Sunflower oil and chopped them at speed 5 for 5 seconds.

This was the result! I sauteed it and then added the other sauce ingredients before cooking it for 10 minutes.

Meanwhile I browned the Chicken Breast in a pan and then added the sauce to it while I steamed the Rice in the Thermomix.
In the recipe the Chicken Drumsticks and Rice are cooked with the other ingredients.
The meal was delicious and enjoyed by all the family.

Pitta Bread

I like to challenge myself to try out new recipes with the Thermomix so today I decided to make Pitta Bread. The Thermomix Baking Blogger version included Nigella Seeds but as I did not have those I decided to use Poppy Seeds instead.
I activated the Yeast, added the other ingredients, kneaded the dough for 2 minutes and then left it to rise for half an hour. All in the Thermomix.

I then rolled it out into oval shapes and put it in the oven for 10 minutes at 230c.

It puffed up nicely. I then put them on a cooling rack with a tea towel on top so that they would not dry out. We are going to eat these with home made Cream of Tomato Soup which I made yesterday in the Thermie!

Jelly Bean Fudge

One of my customers recommended the Jelly Bean Fudge Recipe from "Keeper of the Kitchen"  HERE so I thouht that I would try it. I was not disappointed!
You grind 200g of White Chocolate and set it aside. I used two 100g packets of Milky Bar Buttons

You melt the other ingredients which include a Tin of Condensed Milk, Butter, Soft Brown Sugar and Golden Syrup for 28 minutes in the Thermomix.
Then you mix in the White Chocolate for 20 seconds on Reverse and then 100g of Jelly Beans for 10 seconds on Reverse.

Pour the mixture into a lined 8 x 8 tin and leave to set for 4 hours at room temperature or 2 hours in the fridge.
The only problem is that it is very hard to stop eating it. Definitely a recipe to make and give away as soon as possible so as not to put on too much weight!
