Chocolate Cake from the Thermomix Basic Recipe Book



Our daughter is returning home later this evening from a few days' holiday in Scotland so I decided to make her the Chocolate Cake from the Basic Cookery Book.
First you whisk 6 Egg Whites at speed 3.5 with the Whisk attached to the Blades.


You remove the Whisked Egg Whites to a bowl and add the Egg Yolks, Butter, Flour and Sugar which are gently cooked for a few minutes.


Next in is 250g of Plain Chocolate in small pieces which you leave to soften in the heated mixture for a few seconds before mixing it at speed 5.


You then put the Egg Whites back in the Mixing Bowl and blend them in with the Whisk Attachment.


Above is the Cake in the Oven and below the cooked Cake.
Needless to say there is only half left for when the dd comes home. we could not wait to try it out.

Sorbet


Two days ago I made some Tropical Fruit Sorbet in the Thermomix. Sorbet is one of the three recipes that we make at Demonstrations and it always gets a "Wow" response. It is a deliciously smooth Sorbet and when you get the left overs out a few days later (If it lasts that long) it is like soft scoop ice cream.


We ate it with fresh Strawberries and Chocolate Brownies.


Above is a photo of the Mixed Berry Sorbet after you have mixed the Fruit,Sugar and Egg White for one and a half minutes.


You then put the whisk on top of the Blades and that whips it up to double the size and makes it smooth and creamy.






All I can say is "Yum!"

Double Chocolate Banana Fudge Loaf


I am always glad to find recipes for using up Bananas that are too ripe to eat but not ready to be thrown out. I came across this recipe on the Bake,Play,Smile Blog HERE.
It is exactly what it says and more. The chopped Cadbury's Dairy Milk Chocolate helped a lot!


You just have to be careful not to overcook it. All the family loved it.

Quirky Cooking Spicy Chicken All in One Dinner


I bought the Quirky Cooking Thermomix Book by Jo Whitton recently and I love it. I am not a special diet person but the photos, lay out and recipes in this book are amazing.
I decided to have a go at the All in One Spicy Chicken Dinner as I was feeling creative and was up for the challenge of a new recipe.
First you mix the marinade and leave the Sliced Chicken Breast in it for 10 minutes


You then layer up the Varoma:- Vegetables in the Tray, Chicken at the top and water with some marinade in the Mixing Bowl. The Rice is placed in the Simmering Basket.Everything cooks together so no having to watch this and stir that as the Thermomix does it all for you.


The Vegetables retain their colour and nutrients.
Below is a photo of the Varoma on top of the Mixing Bowl.


The Rice and Vegetables are removed and kept warm while the Chicken cooks for a bit longer. Then the liquid left in the Mixing Bowl is thickened along with the rest of the Marinade.
Below is the meal ready to serve.
I really enjoyed cooking this meal and the family enjoyed eating it!

The British Isles on a Plate Bramley Apple Shortcake.


The Recipes from this Thermomix Cook Book are amazing. I knew that I had to try this one.
Firsta I made the Pastry which came togethter beautifully.


I then lined a tin with the large portion and put it in the fridge to chill.


The  Apples are baked in the oven for 10 minutes with Butter and Sugar. I added some Cinnamon as I love it with Apples.
The Apples shrink down when baked so you do need the 1200g as stated in the Recipe.


You  need the Baking Tray underneath to catch any drips. The edges of the pastry fell off mine! It tasted delicious but I should have cooked it for a bit longer. I will definitely be making this again,


Chicken with Honey and Ginger from the Thermomix Recipe Forum


Tonight I cooked a Chicken Dish which I discovered on thr Thermomix Recipe Forum. First I chopped the Onion, Garlic and Ginger by dropping them on to the running blades at speed 8. I then sauteed them for 3 minutes/100c/speed 2.I then added Honey, Oil, Salt and Pepper and then Carrots and Courgette,Cubed Chicken and Soy Sauce. I also added 150g Chicken Stock and cooked them for 10 minutes at 100c/reverse speed 1.


Below is the finished dish. The Chicken had shredded a bit because I forgot to press the Reverse Button straight away when cooking the Chicken.


Here it is plated up with Rice and Peas. It was a bit bland so next time I will add some Lime Juice to give it a bit of a kick.
