Thermomix Sticky Toffee Pudding


On a cold and frosty day like today Sticky Toffee Pudding is the pudding of choice.
I mix the pudding in the Thermomix but I confess that I do melt the sauce ingredients on the Hob.
This is a rich pudding with 6 oz of Dates and 6 tablespoons of Double Cream, Butter and Brown Sugar in the sauce but it is delicious, especially so with Vanilla Ice cream.


Make sure that you cover the top of the pudding with some Sticky Toffee Sauce and put it back in the oven for the last 10 minutes of cooking.

Thermomix Grabbit Soup


I had an assortment of left over vegetables in the fridge today so I thought that I would make Grabbit Soup from the Demonstrator Delights Cook Book.
I weighed out the 350g of Vegetables. The first step is to melt 50g Butter and then add the Vegetables with ,2 Cloves of Garlic and an Onion in quarters.

 
These are chopped for 5 seconds / speed 6. Then I scraped down the bowl and added the chopped Potato, 750g boiled Water and 3 teaspoons of Stock Powder. I then cooked it for 18 minutes / 100c / spoon speed.

I then added a handful of frozen Parsley, Salt and Pepper and then whizzed it for 30 seconds/ speed 10. I am still amazed at the deliciously smooth texture of Soups made in the Thermomix.
I served the Soup with home made Multi Grain Rolls - kneaded in the Thermomix!.

Plum and Apple Pudding with Salted Caramel Sauce.


On Monday we had our Team Meeting in Conwy and Frances cooked a delicious Vegetable Biryani from the new Thermomix Indian Cook Book. I took along a Plum and Apple Dessert. I got the recipe from BBC Food and adapted it to the Thermomix.
first I choped the Root Ginger and Pecans.


Then I ground the Demerara Sugar in 2 seconds at speed 10 to make Brown Caster Sugar.
I chopped the Apple and Plums in seconds and then mixed the cake mixture which included Cinnamon (Ground from Cinnamon Sticks in the Thermomix - tastes much better!) and Nutmeg.


Above is the baked Pudding. Below is the Salted Caramel Sauce that I made to go with it!
This was made in 7 minutes in the Thermomix! The only problem was that I forgot to take it with me to the Team Meeting.

Thermomix Jamaican Gingerbread




At last I made some Jamaican Gingerbread in my Thermomix. I found the Recipe HERE on the Passionate Pantry Blog.
First you sift the dry ingredients in the Thermomix for 10 seconds at speed 4 and put them in a bowl.
Then you chop the Ginger Root.


 I used Black Treacle instead of Molasses and it was fine.
 I weighed and melted the Sugar, Black Treacle, Golden Syrup and Butter.


I then added a few more ingredients including Sour Cream, Eggs and Orange Zest and mixed those in.



You then add the dry ingredients that you sited earlier.


And here is the finished cake. It was moist and yummy. I gave it to the ladies who came to my Craft Day and they seemed to enjoy it with a little bit of Butter!

Broccoli and Cauliflower Au Gratin


We used to do this recipe as part of our Demonstration. First you make the Breadcrumbs in seconds.
Then you can steam the Cauliflower and Broccoli in the Varoma while you simmer some soup underneath. This used to be the Red Pepper and Tomato Soup.


Once the soup is cooked and creamed by the Turbo Function then you clean the mixing bowl and make the Bechamel Sauce.Sauces are amazing in the Thermomix as they are lump free and have an amazing texture.


Once the Vegetabes and Sauce have been placed in an oven proof dish then you spread the Bread Crumb mixture on top and bake it in the oven.


Banana Ice Cream with Salted Caramel Sauce


Every  Customer is offered  a free Class after purchasing a Thermomix.
Banana Ice Cream and Salted Caramel Sauce are two out of seven recipes in that Class.
It is a very good way of using up left over Bananas if you slice and freeze them in a single layer.
All you do is mix the bananas with double or single cream. I added some Tropical Frozen Fruit as well.


The Salted Caramel Sauce Recipe that I used was from the Every Day Cooking for Thermomix Families Book as it only takes 8 minutes and it is delicious.
The Brownie in the above photograph was also made in the Thermomix.

Sweet Potato and Ginger Soup from Thermomix Demonstrator Delights Cook Book.


This soup had a lot of fresh vegetables in it including Sweet Potatoes, Carrots, Onion, Red Pepper, Celery and Fresh Ginger.
First you chop the Vegetables with Butter and then saute them for 10 minutes/ 100c/ speed 2.
Then you add Salt, Pepper and 150g single or Double Cream and blend it for 1 minute at Speed 8 until smooth.

It tasted delicious and is now on our repeat Menu list.

Thermomix Victoria Sponge.


After making the Apple Parkin (See previous post) I made the Victoria Sponge from the British Isles on a Plate Cook Book. First you cream the Butter and Sugar.


See how nicely creamed everything is.


 Then you add the Whisk Attachment on to the Blades and add Eggs, Self Raising Flour , Baking Powder, Bicarb Soda and Vanilla Extract.


This is what it turns out like. Lots of air whisked into this mixture.


You divide it between 2 eight inch Sandwich Tins and bake it at 170c for about 25 minutes.


Above are the two parts of the Cake when they had just come out of the oven.
Below is the Cake with Jam and a sprinkling of Icing Sugar.
I am sure that you could adapt this recipe to make chocolate, lemon,orange,coffee cake.

Apple Parkin


Tonight I decided to try out the Appe Parkin from the British Isles on a Plate Thermomix Cook Book.
First you quarter 450g Bramley Apples and chop them in seconds.


Then you cook them to create a yummy looking Apple Sauce.
To this you then add Butter,Treacle, Golden Syrup, Mixed Spice, Self Raising Flour, Medium Oatmeal,Brown Sugar, Bicarb Soda. An Egg, Milk.


After mixing it again it is ready to pour into the tin and put in the oven.


Just over an hour later the Parkin was ready to take out of the oven. The book advises leaving it for a day or two for the flavours to develop but I don't think that it will last that long in our house.

Lemon Slice



I have always wanted to make Lemon Slice which is very popular in America so you can imagine my delight when I found the Recipe in my recently acquired Fast and Easy Thermomix Cookery Book.
It has a shortbread base covered with a Lemon Curd Topping and then it is baked in the Oven. These  are incredibly easy to make with the Thermomix. No standing and stirring for the Lemon Curd Topping.


Thermomix Pizza


Only one photograph today of the Pizza that I made for lunch .
I used the Pizza Dough Recipe from the Basic Cook Book but with a combination of Strong Bread and OO Flour.
I made a Tomato Sauce by sauteing the Garlic and Onions first and then adding some Passata and a Tin of Chopped Tomatoes with a teaspoon of Basil and Oregano and some Salt, Pepper and two teaspoons of Caster Sugar. Meanwhile I cooked some Bacon and chopped it into small pieces.
Once the Tomato Sauce was cooked I put it on top of the rolled out Pizza Dough. I then cleaned out the Mixing Bowl and grated the Mozzarella in it on speed 5 for 4 seconds.
I sprinkled over the Bacon Pieces and the Mozzarella and baked the Pizza for 20 minutes at 180c.
The base was light and tasty and there was none left after lunch!

Chocolate Cake from the Thermomix Basic Recipe Book



Our daughter is returning home later this evening from a few days' holiday in Scotland so I decided to make her the Chocolate Cake from the Basic Cookery Book.
First you whisk 6 Egg Whites at speed 3.5 with the Whisk attached to the Blades.


You remove the Whisked Egg Whites to a bowl and add the Egg Yolks, Butter, Flour and Sugar which are gently cooked for a few minutes.


Next in is 250g of Plain Chocolate in small pieces which you leave to soften in the heated mixture for a few seconds before mixing it at speed 5.


You then put the Egg Whites back in the Mixing Bowl and blend them in with the Whisk Attachment.


Above is the Cake in the Oven and below the cooked Cake.
Needless to say there is only half left for when the dd comes home. we could not wait to try it out.

Sorbet


Two days ago I made some Tropical Fruit Sorbet in the Thermomix. Sorbet is one of the three recipes that we make at Demonstrations and it always gets a "Wow" response. It is a deliciously smooth Sorbet and when you get the left overs out a few days later (If it lasts that long) it is like soft scoop ice cream.


We ate it with fresh Strawberries and Chocolate Brownies.


Above is a photo of the Mixed Berry Sorbet after you have mixed the Fruit,Sugar and Egg White for one and a half minutes.


You then put the whisk on top of the Blades and that whips it up to double the size and makes it smooth and creamy.






All I can say is "Yum!"
