Quirky Cooking Spicy Chicken All in One Dinner
I bought the Quirky Cooking Thermomix Book by Jo Whitton recently and I love it. I am not a special diet person but the photos, lay out and recipes in this book are amazing.
I decided to have a go at the All in One Spicy Chicken Dinner as I was feeling creative and was up for the challenge of a new recipe.
First you mix the marinade and leave the Sliced Chicken Breast in it for 10 minutes
You then layer up the Varoma:- Vegetables in the Tray, Chicken at the top and water with some marinade in the Mixing Bowl. The Rice is placed in the Simmering Basket.Everything cooks together so no having to watch this and stir that as the Thermomix does it all for you.
The Vegetables retain their colour and nutrients.
Below is a photo of the Varoma on top of the Mixing Bowl.
The Rice and Vegetables are removed and kept warm while the Chicken cooks for a bit longer. Then the liquid left in the Mixing Bowl is thickened along with the rest of the Marinade.
Below is the meal ready to serve.
I really enjoyed cooking this meal and the family enjoyed eating it!

Chicken with Honey and Ginger from the Thermomix Recipe Forum
Tonight I cooked a Chicken Dish which I discovered on thr Thermomix Recipe Forum. First I chopped the Onion, Garlic and Ginger by dropping them on to the running blades at speed 8. I then sauteed them for 3 minutes/100c/speed 2.I then added Honey, Oil, Salt and Pepper and then Carrots and Courgette,Cubed Chicken and Soy Sauce. I also added 150g Chicken Stock and cooked them for 10 minutes at 100c/reverse speed 1.
Below is the finished dish. The Chicken had shredded a bit because I forgot to press the Reverse Button straight away when cooking the Chicken.
Here it is plated up with Rice and Peas. It was a bit bland so next time I will add some Lime Juice to give it a bit of a kick.

Thermomix Recipes
I thought that I would give you a random selection of some of the food that I have been cooking in the Thermomix in the last few days so that you can see the variety of dishes that you can cook with it.

This Recipe got a Wow from my 21 year old daughter who is not a Thermomix fan. She asked for it once a week from now on!
I made some Lemom Crumble Bars to take to our Team meeting on Monday. I got the recipe from Bakeplaysmile. The Team loved them and so did the family. The top and base are like a Flapjack Mixture and the centre is like a Lemon Cheesecake.
If you google Thermomix Easy Chocolate Cake then you will probably get the Recipe for the above Cake and the Icing. It really is easy and tastes delicious.
The Carrot Cake Recipe is in the Welcome Collection which is free when you sign up for the Recipe Platform. You cut the Carrots into chunks, weigh all of the other ingredients into the Mixing bowl, mix for 5 seconds and just pour the mixture into the tin to bake it. how easy is that?
In my weekly shop I bought some Buttermilk as I knew that I wanted to try out the Buttermilk Scones in the Everyday Cooking for Thermomix Families Book (which has a Chip to go with it.)
They were tasty but I think that I prefer the texture of the Demo Cheese Scones or Plain Scones from the Recipe Forum. The great thing about making Scones in the Thermomix is that you don't touch the mixture until you flatten it to cut the Scones out. They are incredibly quick to make and taste light and delicious.

Thermomix Chicken and Cashews
I found a yummy looking recipe in the Everyday Cooking for Thermomix Families Book. I have been fortunate as a Thermomix Advisor to earn the Book and the Chip.
First you chop the Garlic and Ginger. Then add the Chicken to mix it.
The Chicken is then put on one side in the Varoma Tray.
The Rice is cooked in the Simmering Basket at the same time as the Chicken in the Varoma.
The Rice is then removed and kept warm and Vegetables are cooked with the Chicken.
Below is the cooked Chicken which is kept warm while the Sauce is prepared in about 8 minutes.
Here is the finished dish. The family loved it. It tasted better than a Chinese Take Away and it does not have any of those nasty additives and artificial flavourings.

Chicken with Creamy Vegetable Sauce
Two nights ago I decided to try the Chicken with Creamy Vegetable Sauce Recipe from the Basic Cookery Chip that comes with the Thermomix. First I placed slices of Chicken Breast on the Varoma Tray and seasoned them with salt and pepper.
I then placed water, carrots, and a Chicken Stock Cube into the Mixing Bowl. The recipe included celeriac and celery leaves but I did not have these to hand. I placed the Varoma Tray on the Mixing Bowl and put the lid on. I then cooked it for 20 minutes/Varoma/speed 1.
While that was cooking I weighed out (on top of the Varoma lid!) 40g plain flour,100g cream,1 tsp of Worcester Sauce and 1 tsp of lemon juice into separate bowls. I then had time to do other things while the Thermomix did the cooking.
There are many safety features of the Thermomix. One of which is that it automatically has an 8 second cooling down period after cooking food.
Below is a photo of the meal plated up after I had added the extra ingredients above cooked for 1 minute/100c/speed 6 and I then added 60g butter 1 min/80c/speed 2.
There was too much sauce for 4 people and it tasted a bit bland. That was my fault for not adding the celeriac,celery leaves and mushrooms. The texture of the sauce was smooth and creamy.
I would like to do this recipe again but I will get all of the ingredients and reduce the amount of sauce.
