Carrot and Coriander Soup with French Bread

I chose to make Carrot and Coriander Soup for lunch today because I had lots of carrots in the fridge.
I found the recipe on the Cookidoo platform in my Welcome Pack.
First you grind the lentils and lemon peel and then you chop the carrots, onions and butter.

You then add the stock and cook the soup before turboing it for a minute with some sprigs of coriander.

The texture was creamy as it always is when you turbo soup in the Thermomix. It tasted really good  on a hot summers day.

I also baked some French Bread to go with the soup.

Spiced Moroccan Lentil Soup

I decided it was time to try out a new soup recipe so I chose the Spiced Moroccan Soup from the Basic Cook Book. I mixed the spices and then chopped the onions and garlic and sauteed them for 5 minutes. I then added the tomatoes, lentils and stock and cooked the soup for 20 minutes.

The soup was deliciously spicy and had some chunkiness to it which I liked.
I will definitely be making this one again.

Tomato and Lentil Soup

I found a recipe for Tomato and Red Lentil Soup in the "Everyday Cooking For Thermomix Families" Australian Cook Book. The first thing that you do when making this soup is grind the Lentils with 5 Peppercorns. This is what you get in 1 minute at speed 9.

As you can see from the above photo the ingredients come very close to the Max level.

The next photo shows you the ingredients after you have cooked them for 20 minutes.
The photo below shows the Soup when you have pulverised it at speed 9 for 1 minute.
It had a lovely creamy texture - as always with Thermomix soups that have been mixed at high speed at the end of cooking.

Five Seed Bread

I made Five Seed Bread from the Basic Cook Book this morning. It is a recipe from the Basic Cook Book that comes with the Thermomix. It is wet and sticky as you can see,
The quantity is too much for a 2lb tin so it is best to split it between a 2lb and a 1lb tin or get a 3lb tin!

You only let it rise once before baking it.
The loaf is flat on top but it has a delicious crust and a moist crumb. You feel very healthy when you are eating it!

Here is some sliced to whet your appetite.

Sweet Potato and Ginger Soup from Thermomix Demonstrator Delights Cook Book.

This soup had a lot of fresh vegetables in it including Sweet Potatoes, Carrots, Onion, Red Pepper, Celery and Fresh Ginger.
First you chop the Vegetables with Butter and then saute them for 10 minutes/ 100c/ speed 2.
Then you add Salt, Pepper and 150g single or Double Cream and blend it for 1 minute at Speed 8 until smooth.

Here are the before and after blending photos.
It tasted delicious and is now on our repeat Menu list.
The Recipe can be found in the Thermomix Demonstrator Delights Cookery Book on page 22.

Red Pepper and Tomato Soup

One of the four Demo Recipes that we do, as Advisors, is Red Pepper and Tomato Soup so I decided to prepare some for lunch today.
First you weigh the Onion, Red Pepper, Garlic and Oil into the Mixing Bowl. Then you chop it 2 seconds/ speed 5. Scrape down the sides of the Mixing Bowl with the spatula then saute 5 minutes/ 100c/ speed 1.
Add 400g Tomatoes,Stock Cube and Water, Ground Lentils, 1 tsp Salt,1/2 tsp Pepper and 1/4 tsp Cayenne Pepper if using.
Cook 14 minutes/ Varoma/ speed 2.5.

Below is a photo taken before you puree it 1 minute/ speed 10.
When you have been cooking at high temperatures in the Thermomix it slowly increases the temperature when you puree the ingredients as a safety precaution. NB this is only if the food is heated in the Thermomix it does not apply if hot food is added and then blended.

Notice the creamy consistency of the finished soup. It is very similar to Heinz Cream of Tomato Soup but without all of the additives and preservatives. We all had second helpings so that there were no left overs.

Starting my Thermie Journey

Three weeks ago I had my first Thermomix Training day with Betty Baxter in Carnforth. It was an amazing day and I learned a lot. I had two more training days the last of which was yesterday.
So now I am a Thermomix Advisor at the start of my Thermie Journey.
My Thermomix Machine arrived two days after the first training day on Thursday, June 9th, and I have not looked back..

This is the Thermomix machine with the Varoma basket and tray (which can be removed) on top.
This is not just an up market Food Processor but 12 kitchen appliances in one with an easy to use touch screen and it comes with a Cookery Chip which attaches to the side to give guided cooking.

Here is a close up of the touch screen showing you Time, Temperature and Speed. with the Guided Cooking function using the Chip the time and temperature are set for you. All you have to do is turn the speed dial to start the cooking process.
I unpacked the machine with my 15 year old son, Tom, and within seconds he had mastered the touch screen and was asking me whether I wanted the screen lighter or darker.
He then prepared the fruit sorbet in 5 minutes or less from start to finish.

I made brown bread rolls and leek and potato soup soon afterwards.
I could not believe the creamy texture of the soup and I had not added any cream. This is created by the speed of the blades rotating at 10,700 revolutions per minute. For stirring they rotate at 40 revolutions per minute.
